Issue #10 – CardcaptorSatan’s Cupcake Collaboration

A cooking blog, so totally unoriginal but who cares everyone LOVES cupcakes so why not try ours. You have 3, that’s THREE different people giving you sets of instructions on how to make all of these delicious goodies, that in our opinion cannot be beaten by Martha Stewart-wannabes in your work place.

The below recipes are all mine, but there will be short follow up blogs for recipes from Sailor Venus and Sailor Saturn.

Please note that as all three of us a kiwis, we will be using METRIC measurements, and therefore you may need to adjust accordingly if you are an imperial measurer …. Is that a word Sailor Venus?  ….. She says Yes.

Right, so if you were lucky enough to pick this up as a Zine from the Auckland Zine Fest 2015, you will have been able to taste one of the cupcakes from this blog, which, well we won’t tell you but they sold out so you can take solace in knowing they are damn good.

Recipes from CardcaptorSatan;

1) Gingerbread (Men) Cupcakes (No Ginger’s were harmed during the making of these Cupcakes)

Ingredients:

  • 1 1/4c Plain Flour
  • 1/2c Self-Raising Flour
  • 1 tsp Baking Powder
  • 2 Tbsp Ground Ginger
  • 3 tsp Mixed Spice
  • 1 c Brown Sugar
  • 3/4 c Golden Syrup
  • 3/4 c Milk
  • 1/3 c Olive Oil
  • 2 Eggs

Method:

  1. In a large bowl sift flours, baking soda, ginger and mixed spice
  2. Add brown sugar and stir in until combined
  3. In a separate bowl or jug (preferably a jug), mix golden syrup, milk, oil and eggs until combined.
  4. Gradually mix wet ingredients into dry ingredients until smooth and combined
  5. Spoon mixture into pre-lined or greased baking tray
  6. Bake in pre-heated oven at 180’C for 15 minutes
  7. When cooled, either core and fill or top with Royal Icing.

I’d suggest taking a small core out of the centre and filling it with some Royal Icing and topping over top with an M&M or similar candy as decoration. Though I have made mini Gingerbread Men to use instead, that is, if you’re interested in the additional work.


2) The Freeze Cupcakes (Please take care as you pick Coconuts from a Coconut Tree)

Ingredients;

  • 80g Butter, melted
  • 2/3 c Castor Sugar
  • 2 tsp Vanilla Essence
  • 1 Egg
  • 2/3 c Coconut, desiccated
  • 1 c Self-Raising Flour
  • 2/3 c Milk

Method:

  1. Beat butter and sugar until combined, add vanilla and egg then beat in coconut.
  2. Sift in Flour and mix until combined
  3. Add milk and mix into a smooth batter
  4. Spoon into pre-lined or grease baking tray
  5. Bake in a pre-heated 180’C degree oven for 10 – 12 minutes.

For the icing, combine 1 c grated or desiccated coconut with 2 c Icing Sugar, 1 tsp Butter (melted) in a bowl. Then gradually beat in 1/4 c Hot Water until reaching desired consistency.

We did this with the addition of pink food colouring to 1/2 the cupcakes and 1/2 the icing so they had the traditional pink/white look of Coconut Ice.


3) CO2 Cupcakes (1 part Carmen to 2 parts Dioxide)

Ingredients:

  • 125g Butter, softened
  • 1/2 c Castor Sugar
  • 1 tsp Lemon Juice (or Lemon Essence, I do use Lemon Cello if it’s on hand though)
  • 2 Eggs
  • 1 c Plain Flour
  • 2 tsp Baking Powder
  • 1/4 c Milk
  • 1 – 2 tsp Orange Rind, grated

Method:

  1. Cream butter and sugar in a bowl, add one egg at a time ensuring they are well combined between each addition.
  2. Mix in lemon juice and orange rind
  3. Sift in flour and baking powder and fold until combined
  4. Gradually add milk, mixing into form a smooth mixture
  5. ** You could add some candied citrus rind you if you have any like you would chocolate chips but not a must
  6. Spoon in pre-lined or greased baking trays
  7. Bake in a pre-heated oven at 180’C for 15 minutes

Use Citrus flavoured icing and top with candied Orange & Lemon Slices like wings and fill centre with candied rind or additional icing covering the tips on the cupcake.


4) Javanauts

Ingredients:

  • 2 Tbsp Instant Coffee Powder
  • 6 Tbsp Butter
  • 85g Castor Sugar
  • 1 Tbsp Honey
  • 200mL Water
  • 225g Plain Flour
  • 2 Tbsp Cocoa Powder
  • 1 tsp Baking Powder
  • 3 Tbsp Milk
  • 1 Egg

Method:

  1. Put coffee, sugar, honey, butter and water in a saucepan and heat gently, stirring until sugar is dissolved.
  2. Bring to the boil, then reduce the heat and simmer for 5 minutes.
  3. Pour into heatproof mixing bowl & bring to room temperature
  4. Sift in flour and cocoa
  5. Dissolve baking powder in milk, beat in egg and beat mixture until smooth.
  6. Spoon mixture into pre-lined or greased baking trays
  7. Bake in a pre-heated oven at 180’C for 15 – 18 minutes

Decorate with White Chocolate Frosting and dust with cocoa powder or grated chocolate.


5) Salty & Sweet – Caramel that is you dirty animal!

Ingredients:

  • 125g Butter, softened
  • 1/2 c Castor Sugar
  • 1 tsp Caramel Essence
  • 2 Eggs
  • 1 c Plain Flour
  • 2 tsp Baking Powder
  • 1/4 c Milk
  • Salted Caramel, liquid form prefered

Method:

  1. Cream butter and sugar in a bowl, add one egg at a time ensuring they are well combined between each addition.
  2. Mix in essence
  3. Sift in flour and baking powder and fold until combined
  4. Gradually add milk, mixing into form a smooth mixture
  5. Spoon mixture into pre-lined or grease baking tray
  6. Bake in a pre-heated at 180’C for 10 – 15 minutes.
  7. Once baked and cooled to room temperature, core and fill with the salted caramel.

(Alternatively you can place cubes of caramel in the mixture prior to baking)

Top with Vanilla Frosting and a Jersey Caramel or Vanilla Frosting drizzled with more caramel.
